Instructions
In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth and fluffy. This helps create a creamy, lump-free consistency.
Mix in the peppermint extract and vanilla extract (if using). Slowly add powdered sugar, one cup at a time, until a smooth, dough-like consistency forms. The dough should be thick but still soft enough to roll.
If you want colored mints, divide the dough into separate bowls and mix in a few drops of food coloring until you reach your desired shade. Gel food coloring works best as it doesn’t affect the consistency.
Roll small pieces of dough into balls, about 3/4 inch in diameter. Coat each ball lightly in granulated sugar to prevent sticking.
For a decorative touch, flatten each ball with a fork for a ridged design, or use molds to create unique shapes.
Place the mints on a parchment-lined baking sheet and let them air-dry at room temperature for 2 hours until they firm up. If you prefer a slightly firmer texture, refrigerate them for an additional 30 minutes.
