For the Casserole Base

  • 8 slices turkey bacon, cooked until crispy and chopped
  • 2 cups shredded mozzarella or cheddar cheese (or a mix)
  • 4 large eggs
  • 1 ½ cups milk (whole, 2%, or unsweetened almond)
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

For the Guacamole

  • 2 ripe avocados
  • Juice of 1 lime
  • 1 small garlic clove, minced
  • 2 tablespoons finely diced red onion
  • 2 tablespoons chopped fresh cilantro
  • Salt and pepper to taste

Instructions

Step 1: Toast the Bread
Preheat your oven to 350°F (175°C). Spread the cubed bread on a baking sheet and drizzle with olive oil or melted butter. Toss to coat lightly and bake for 8 to 10 minutes, until just slightly crisp. This helps prevent the casserole from getting soggy later.

Step 2: Cook the Turkey Bacon
While the bread toasts, cook the turkey bacon in a skillet over medium heat until crisp. Transfer to a paper towel to drain, then chop into bite-sized pieces. Set aside.

Step 3: Make the Guacamole
In a medium bowl, mash the avocados with lime juice, minced garlic, red onion, cilantro, salt, and pepper. You want it creamy but still a bit chunky. Taste and adjust seasoning as needed.

Step 4: Make the Egg Custard
In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper until fully combined and slightly frothy.

Step 5: Layer the Casserole
Lightly grease a 9×13-inch baking dish. Spread half of the toasted bread cubes on the bottom. Spoon dollops of guacamole over the bread, followed by a layer of chopped turkey bacon and shredded cheese. Repeat with the remaining bread, guacamole, bacon, and cheese.

Step 6: Pour the Custard Over
Slowly pour the egg mixture evenly over the entire casserole, pressing down gently with the back of a spoon or your hands to make sure all the bread absorbs some of the liquid.

Step 7: Bake It Up
Cover the dish with foil and bake at 350°F for 20 minutes. Then remove the foil and bake for another 10 to 15 minutes, until the top is golden, the cheese is melted, and the center is set. If desired, broil for the last 1 to 2 minutes to get a crispier top.

Step 8: Rest and Serve
Let the casserole sit for 5 minutes after removing it from the oven. This helps everything set up nicely. Slice into portions and garnish with fresh cilantro, a dash of hot sauce, or an extra scoop of guacamole if you’re feeling wild.
