Ingredients
– 2 cups sweet rice flour (also known as glutinous rice flour)
– 1 cup water
– 1 tablespoon sugar
– 1 tablespoon salt
– 1 tablespoon vegetable oil
– ½ cup gochujang (Korean red pepper paste)
– 2 tablespoons honey
– 1 tablespoon soy sauce
– 1 tablespoon sesame oil
– Sesame seeds, for garnish
– Skewers (soaked in water if wooden)
Instructions
Creating Tteokkochi can be straightforward if you follow these simple steps:
1. Prepare the Rice Cake Mixture: In a mixing bowl, combine the sweet rice flour, water, sugar, and salt. Stir until smooth.
2. Steam the Mixture: Pour the mixture into a heat-proof dish. Steam over boiling water for about 20 minutes or until it becomes sticky and translucent.
3. Cool the Rice Cake: Once done, let the rice cake cool slightly before handling.
4. Shape the Rice Cake: Once cool enough to handle, knead the dough briefly. Divide it into small pieces and shape them into cylindrical forms.
5. Skewer the Rice Cakes: Take a skewer and thread the shaped rice cakes onto it. Aim for 3-4 pieces per skewer.
6. Prepare the Sauce: In a small bowl, mix gochujang, honey, soy sauce, and sesame oil until well combined.
7. Coat the Skewers: Brush the sauce generously onto the skewered rice cakes.
8. Grill the Skewers: Preheat a grill pan over medium heat. Grill the skewers for about 2-3 minutes on each side until they are slightly charred.
9. Garnish: Remove from the grill, sprinkle with sesame seeds, and drizzle with any remaining sauce.
10. Serve: Tteokkochi is best enjoyed warm!
