- 1 pound ground beef (or ground turkey for a lighter option)
- 1 packet taco seasoning (or homemade blend)
- ½ cup water
- 1 cup shredded cheddar cheese (or a blend of cheddar and Monterey Jack)
- 1 package refrigerated crescent roll dough (or puff pastry for a flakier texture)
- ½ cup ranch dressing
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon chili powder (optional, for extra heat)
- 1 egg, beaten (for egg wash)
- 2 tablespoons chopped fresh cilantro (for garnish)
- Sour cream or extra ranch dressing (for dipping)
Instructions
In a large skillet over medium heat, cook the ground beef until browned, breaking it up into crumbles as it cooks. Drain any excess grease, then stir in the taco seasoning and ½ cup of water. Let it simmer for 2-3 minutes until the mixture thickens and absorbs the flavors. Remove from heat and let it cool slightly.
Unroll the crescent roll dough onto a lightly floured surface. Separate the dough into individual triangles (if using crescent rolls) or cut into small squares (if using puff pastry). Flatten each piece slightly to create space for the filling.
Spoon a small amount of taco-seasoned beef onto each piece of dough. Sprinkle shredded cheese over the beef, then drizzle a little bit of ranch dressing for that signature creamy flavor. Be careful not to overfill, or the bites may burst open while baking.
Fold the edges of the dough over the filling and pinch to seal. If using crescent rolls, bring the corners together and gently press down to secure the filling inside. Brush each bite with beaten egg to give them a beautiful golden color when baked.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and arrange the taco bites, making sure they are not touching. Bake for 12-15 minutes, or until golden brown and crispy.
Remove from the oven and let them cool for a minute before serving. Sprinkle with freshly chopped cilantro and serve with extra ranch dressing or sour cream for dipping. Enjoy!
