Instructions
Creating your Stuffed Pepper Jack-O’-Lantern Sliders can be a fun and satisfying experience. Follow these simple steps for amazing results:
1. Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the sliders.
2. Prepare the Peppers: Carefully slice off the tops of the bell peppers and remove the seeds. Make sure to keep the tops, as you’ll use them later to create the cute Jack-O’-Lantern look.
3. Create the Faces: Use a small knife to carve Jack-O’-Lantern faces into the front of each pepper. This is where the kids can join in for some fun! Set the peppers aside.
4. Cook the Filling: In a skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion and minced garlic until they are fragrant and translucent, about 3-5 minutes.
5. Add the Meat: Stir in the ground meat, and cook it until browned. Make sure to break it apart with a spatula. Drain any excess fat if necessary.
6. Mix in the Seasonings: Add the cooked rice, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine everything.
7. Add Cheese: Remove the skillet from heat and fold in ¾ cup of shredded Pepper Jack cheese into the mixture until melted and combined.
8. Stuff the Peppers: Carefully fill each pepper with the meat and cheese mixture, pressing down gently to pack them in.
9. Bake: Place the stuffed peppers upright in a baking dish, and cover with foil. Bake in the preheated oven for 25-30 minutes.
10. Melt More Cheese: Remove the foil, and sprinkle the remaining cheese on top of each pepper. Bake for an additional 5 minutes or until the cheese is bubbly and slightly golden.
11. Serve Warm: Once done, let the peppers cool slightly before serving. You can place them on slider buns if desired.
