Ingredients
For the Cookies:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/2 tsp strawberry extract (or 2 tbsp freeze-dried strawberry powder)
- 2 cups all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- Optional: 2–3 drops natural pink food coloring
For Rolling:
- 1/4 cup granulated sugar (for coating)
Optional Add-ins:
- 1/2 cup white chocolate chips
- 1/4 cup chopped dried strawberries
Instructions
• In a large mixing bowl, cream the butter and sugar until light and fluffy.
• Add the egg, vanilla extract, and strawberry extract (or powder) and mix until fully combined.
• If using food coloring, add it now and mix until evenly tinted.
• In a separate bowl, whisk together the flour, baking powder, and salt.
• Gradually add the dry ingredients to the wet mixture, mixing just until a soft dough forms.
• If the dough is too soft, refrigerate it for 15–20 minutes to make it easier to handle.
• This step helps the cookies hold their shape during baking.
• Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
• Roll the dough into 1-inch balls.
• Roll each ball in the granulated sugar to coat.
• Place the balls about 2 inches apart on the prepared baking sheet.
• Bake for 9–11 minutes or until the edges are just lightly golden and the centers look set.
• Remove from the oven and let the cookies cool on the baking sheet for 5 minutes.
• Transfer to a wire rack to cool completely.
• Drizzle with white chocolate or add sprinkles for a festive touch.
• Sandwich two cookies with cream or frosting for an elevated presentation.
