Scale
For the Crust:
- 2 cups crushed Golden Oreos (or vanilla wafer cookies)
- 5 tablespoons unsalted butter, melted
For the Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 cup sour cream
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- ½ cup strawberry puree (fresh or frozen strawberries blended)
For the Strawberry Crunch Topping:
- 1 cup Golden Oreos, crushed
- ½ cup freeze-dried strawberries, crushed
- 3 tablespoons unsalted butter, melted
For the Whipped Cream Topping (Optional):
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C). Lightly grease a 9-inch springform pan and line the bottom with parchment paper.
- In a medium bowl, combine the crushed Golden Oreos and melted butter until the mixture resembles damp sand.
- Press the crust mixture firmly into the bottom of the springform pan, ensuring an even layer.
- Bake for 8-10 minutes until slightly golden. Remove from the oven and allow it to cool while preparing the filling.
Step 2: Make the Cheesecake Filling
- In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth and creamy, about 2-3 minutes.
- Add the eggs, one at a time, beating after each addition until just combined.
- Mix in the sour cream, vanilla extract, and cornstarch, ensuring the batter is well incorporated.
- Gently fold in the strawberry puree, making sure not to overmix. The batter should have a light pink hue.
- Pour the cheesecake batter over the cooled crust, smoothing the top with a spatula.
Step 3: Bake the Cheesecake
- Place the springform pan on a baking sheet and bake in the preheated oven for 50-60 minutes, or until the center is slightly jiggly but the edges are set.
- Turn off the oven, crack the oven door slightly, and let the cheesecake cool inside for 1 hour to prevent cracks.
- Transfer to the refrigerator and chill for at least 6 hours or overnight for the best texture.
Step 4: Prepare the Strawberry Crunch Topping
- In a food processor or a plastic bag with a rolling pin, crush the Golden Oreos and freeze-dried strawberries until they form small crumbles.
- Transfer to a bowl and mix in the melted butter until combined. The mixture should be slightly sticky and crumbly.
Step 5: Assemble the Cheesecake
- Once the cheesecake is fully chilled, remove it from the springform pan and place it on a serving plate.
- Gently press the strawberry crunch topping onto the top and sides of the cheesecake, ensuring an even layer.
- If using, prepare the whipped cream by beating the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Pipe swirls around the edges of the cheesecake for an extra decorative touch.
