  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • ½ teaspoon honey (optional, for slight sweetness)

For Garnish:

  • Extra fresh dill and mint
  • A drizzle of olive oil
  • A sprinkle of sumac or paprika (optional, for color)

Instructions

Step 1: Prepare the Cucumbers

Wash the cucumbers thoroughly and spiralize them using a spiralizer. If you don’t have a spiralizer, you can thinly slice the cucumbers into long strips using a mandoline or vegetable peeler.

Step 2: Remove Excess Water

Place the spiraled cucumbers in a colander and sprinkle with a pinch of salt. Let them sit for 5 minutes, then gently squeeze out excess water with a paper towel. This prevents the salad from becoming watery.

Step 3: Make the Yogurt Dressing

In a mixing bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, salt, black pepper, cumin, dill, mint, and honey until smooth and well combined.

Step 4: Toss the Salad

Gently toss the spiraled cucumbers with the yogurt dressing until evenly coated.

Step 5: Garnish and Serve

Transfer the salad to a serving bowl and garnish with extra dill, mint, a drizzle of olive oil, and a sprinkle of sumac or paprika for added color. Serve immediately and enjoy!
