Spanish Potato Fritters

  • Author: Luna
  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

For the Fritters:

  • 3 large potatoes (peeled and grated)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 eggs (beaten)
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon baking powder (for extra crispiness)
  • 2 tablespoons chopped parsley
  • ½ cup grated Manchego cheese (optional, for extra flavor)
  • Olive oil (for frying)

For the Dipping Sauce (Optional):

  • ½ cup mayonnaise
  • 1 teaspoon lemon juice
  • 1 teaspoon smoked paprika
  • 1 clove garlic (minced)

Instructions

Step 1: Prepare the Potatoes

  1. Grate the potatoes using a box grater or food processor.
  2. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture. This step is crucial for crispy fritters.

Step 2: Mix the Batter

  1. In a large mixing bowl, combine the grated potatoes, chopped onion, and minced garlic.
  2. Add the beaten eggs, flour, salt, black pepper, smoked paprika, baking powder, and chopped parsley.
  3. If using, mix in the grated Manchego cheese for extra flavor.
  4. Stir everything until well combined, ensuring the mixture holds together when pressed.

Step 3: Heat the Oil

  1. In a large skillet, heat about ½ inch of olive oil over medium heat.
  2. Test if the oil is ready by dropping a small amount of batter into the pan. If it sizzles immediately, it’s ready for frying.

Step 4: Fry the Fritters

  1. Using a spoon or your hands, scoop out small portions of the batter and flatten them slightly into round patties.
  2. Carefully place them into the hot oil, making sure not to overcrowd the pan.
  3. Fry for about 3-4 minutes per side, or until golden brown and crispy.
  4. Remove and drain on a paper towel-lined plate to absorb excess oil.

Step 5: Make the Dipping Sauce (Optional)

  1. In a small bowl, mix mayonnaise, lemon juice, smoked paprika, and minced garlic.
  2. Stir well and serve alongside the fritters for extra flavor.

Step 6: Serve and Enjoy

  1. Garnish the fritters with extra chopped parsley or a sprinkle of sea salt.
  2. Serve hot with your favorite dipping sauce or as part of a tapas platter.
