Instructions
Step 1: Prepare the Chicken
- Cut the chicken breasts or thighs into bite-sized cubes.
- Place the chicken in a bowl and season with salt, black pepper, garlic powder, and white pepper (if using).
- Add the egg white and mix well to coat the chicken evenly.
- Toss the chicken pieces in cornstarch, ensuring they are fully coated for maximum crispiness.
Step 2: Fry the Chicken
- Heat about 1 inch of vegetable oil in a pan over medium-high heat. The oil should reach 350°F (175°C)—you can test it by dropping in a small piece of coated chicken; if it sizzles immediately, it’s ready.
- Fry the chicken pieces in batches, making sure not to overcrowd the pan. Cook for about 3-4 minutes per side, or until golden brown and crispy.
- Remove the chicken and drain on a paper towel-lined plate.
