  • ½ cup breadcrumbs or crushed crackers
  • ¼ cup finely chopped onion

  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs, beaten
  • 2 tablespoons mayonnaise
  • 1 tablespoon all-purpose flour
  • ½ cup vegetable oil (for frying)

Instructions

Step 1: Prepare the Salmon Mixture

In a large mixing bowl, add the cooked or canned salmon and flake it apart with a fork, ensuring no large chunks remain. If using canned salmon, remove any excess liquid or bones. Add the finely chopped onion, parsley, Dijon mustard, lemon juice, garlic powder, smoked paprika, salt, and black pepper. Mix everything until well combined.

Step 2: Add Binders

To help hold the croquettes together, stir in the beaten eggs, mayonnaise, and flour. Mix well to form a cohesive mixture. The texture should be moist but firm enough to shape into patties. If the mixture feels too wet, add a little more flour or breadcrumbs to firm it up.

Step 3: Shape the Croquettes

Using your hands or a spoon, scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the remaining mixture until all the croquettes are formed. You should get about 8-10 croquettes, depending on the size.

Step 4: Coat with Breadcrumbs

Spread the breadcrumbs or crushed crackers onto a plate. Lightly coat each croquette with the breadcrumbs, pressing gently so they adhere. This step adds an extra crunch to the final dish.

Step 5: Heat the Oil

In a large skillet, heat the vegetable oil over medium heat until it shimmers but is not smoking. You can test if the oil is ready by dropping a small breadcrumb into it—if it sizzles immediately, it’s hot enough.

Step 6: Fry the Croquettes

Carefully place the croquettes into the hot oil, making sure not to overcrowd the pan. Cook for about 3-4 minutes per side, or until they turn golden brown and crispy. Use a spatula to gently flip them halfway through the cooking process.

Step 7: Drain and Serve

Once cooked, transfer the croquettes to a plate lined with paper towels to absorb any excess oil. Allow them to cool for a couple of minutes before serving.

Step 8: Enjoy!

Serve your salmon croquettes with a side of tartar sauce, remoulade, or a squeeze of fresh lemon juice. Pair them with a simple salad, rice, or roasted vegetables for a complete meal.
