Salmon Crispy Rice

  • Author: Luna
  • Total Time: 20 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 1 lb (450g) cremini or button mushrooms, cleaned and whole (or halved if large)
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp soy sauce (optional, for extra umami)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp dried thyme (or 1 tsp fresh thyme)
  • ¼ cup fresh parsley, chopped (for garnish)
  • 1 tbsp lemon juice (optional, for brightness)

Instructions

Step 1: Prep the Mushrooms

Before you start cooking, make sure your mushrooms are clean. Instead of washing them under running water (which can make them soggy), use a damp paper towel to gently wipe away any dirt. If your mushrooms are particularly large, you can halve them for a more even cook.

Step 2: Heat the Butter and Oil

In a large skillet over medium heat, melt 2 tablespoons of butter along with 2 tablespoons of olive oil. The combination of butter and oil helps prevent the butter from burning while still infusing the mushrooms with rich flavor.

Step 3: Sauté the Mushrooms

Add the mushrooms to the hot pan in a single layer. Let them cook without stirring for about 3-4 minutes to allow them to develop a golden-brown crust. Once they have some color, give them a stir and continue cooking for another 5 minutes, stirring occasionally. The mushrooms will release their moisture before they begin to caramelize.

Step 4: Add Garlic and Seasonings

Once the mushrooms have browned, add the minced garlic, Worcestershire sauce, soy sauce (if using), salt, black pepper, onion powder, and thyme. Stir well to coat the mushrooms evenly. Let them cook for another 3-4 minutes, allowing the flavors to meld and the garlic to become fragrant.

Step 5: Finish with Butter and Lemon Juice

Reduce the heat to low and add the remaining 1 tablespoon of butter. Stir until melted, creating a silky, flavorful sauce that coats the mushrooms. If you want to brighten up the flavors, squeeze in a bit of lemon juice.

Step 6: Garnish and Serve

Sprinkle the mushrooms with chopped fresh parsley and serve immediately. These mushrooms are best enjoyed warm, either as a side dish or spooned over steak, chicken, or mashed potatoes.
