- 1 lemon, quartered
- 4 cloves garlic, smashed
- 1 small onion, quartered
- Fresh rosemary or thyme sprigs (for stuffing)
Instructions
Step 1: Prepare the Chicken
Remove the giblets and any excess fat from inside the chicken cavity. Pat the chicken dry with paper towels—this helps the skin crisp up beautifully when roasting.
Step 2: Season the Chicken
In a small bowl, mix together salt, black pepper, paprika, garlic powder, onion powder, thyme, cumin, and chili powder. Brush the chicken all over with olive oil or melted butter, then generously rub the spice mixture over the entire bird, including under the skin for extra flavor.
Step 3: Stuff the Cavity
Stuff the cavity of the chicken with lemon wedges, garlic cloves, onion, and fresh rosemary or thyme. This enhances the flavor and keeps the meat moist as it cooks.
Step 4: Truss the Chicken (Optional but Recommended)
For even cooking and better presentation, tie the legs together with kitchen twine and tuck the wings under the body. This helps the chicken cook evenly and prevents the wings from burning.
Step 5: Cook the Chicken
You can cook the rotisserie chicken in three different ways depending on what equipment you have:
Oven Method (Best for Crispy Skin)
- Preheat the oven to 375°F (190°C).
- Place the chicken on a wire rack set over a baking sheet or in a roasting pan. This allows air to circulate and crisps the skin.
- Roast for 1 hour 30 minutes, basting with juices every 30 minutes.
- The chicken is done when it reaches an internal temperature of 165°F (75°C) in the thickest part of the thigh.
Grill Method (Smoky and Charred Flavor)
- Preheat a grill to medium heat (around 350°F).
- If using a rotisserie attachment, secure the chicken on the spit and let it rotate for about 1 hour 20 minutes.
- If using indirect grilling, place the chicken on the unlit side of the grill and cook covered, turning occasionally, until fully cooked.
Air Fryer Method (Quick and Easy)
- Preheat your air fryer to 360°F (180°C).
- Place the chicken breast-side down in the air fryer basket.
- Cook for 30 minutes, then flip and cook for another 30 minutes or until the internal temperature is 165°F.
Step 6: Rest and Serve
Let the rotisserie chicken rest for 10-15 minutes before carving. This allows the juices to redistribute, ensuring tender, juicy meat. Serve with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.
