Instructions
In a mixing bowl, gently toss together the chopped raspberries, red onion, cilantro, lime juice, jalapeño, salt, and honey. Stir carefully to avoid breaking down the raspberries too much—you want a chunky, fresh salsa, not a puree. Let it sit for 10–15 minutes to let the flavors mingle and mellow.
In a separate small bowl, mix your cream cheese (or chosen base) with lemon zest and a pinch of black pepper. If using goat cheese, feel free to add a spoonful of yogurt to make it more spreadable. This creamy layer will balance the tang and acidity of the salsa.
If using baguette slices, lightly toast them in a 350°F oven for 5–7 minutes until crisp but not rock-hard. Let them cool before assembling. For crackers or cucumber slices, no toasting is needed—just make sure they’re dry and ready to hold the toppings.
Spread a small dollop of your creamy base onto each baguette slice, cracker, or cucumber round. Then, top with a spoonful of raspberry salsa, making sure each bite has a little of everything—fruit, herb, onion, and spice.
Finish with a sprinkle of chopped herbs for extra color and flavor. Serve immediately so the base stays crisp and the flavors pop.
