Pastel Rainbow Gelatin Cups

  • Author: Luna
  • Total Time: 5–7 hours
  • Yield: 10 gelatin cups 1x

Ingredients

Scale

For the Flavored Gelatin Layers

  • 4 boxes (3 oz each) flavored gelatin in pastel colors (e.g., strawberry, lemon, peach, berry blue)
  • 4 cups boiling water (1 cup per box)
  • 4 cups cold water (1 cup per box)

For the Creamy Milk Gelatin Layers

  • 2 tablespoons (2 envelopes) unflavored gelatin
  • 1 cup cold water
  • 2 cups boiling water
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract (optional)

Optional Garnish

  • Whipped cream
  • Rainbow sprinkles or pastel nonpareils
  • Mini marshmallows
  • Edible glitter
  • Fresh fruit (berries or kiwi slices)
  • Mint leaves

Instructions

1. Prepare Flavored Gelatin

  • In separate bowls, dissolve each box of flavored gelatin in 1 cup of boiling water.
  • Stir until completely dissolved, then add 1 cup of cold water to each bowl.
  • Let gelatin cool to room temperature (do not refrigerate yet).

2. Prepare Creamy Milk Gelatin

  • In a large bowl, sprinkle unflavored gelatin over 1 cup cold water. Let it bloom for 5 minutes.
  • Add 2 cups of boiling water and stir until gelatin is fully dissolved.
  • Stir in the sweetened condensed milk and vanilla extract, if using. Let cool to room temperature.

3. Set Up Cups

  • Arrange 10 clear plastic dessert cups or small glass cups on a tray or baking sheet for easy transfer.
  • Make sure the cups are level to ensure neat, even layers.

4. Begin Layering

  • Pour approximately 2 tablespoons (or enough to cover the bottom) of the first flavored gelatin into each cup.
  • Chill in the refrigerator for 20–30 minutes, or until set but not too firm.
  • Once set, pour the same amount of milk gelatin on top of the first layer. Chill again until firm.
  • Repeat the process, alternating flavored and milk layers.
  • Continue until all gelatin layers are used—usually 3–4 flavored and 3–4 milk layers per cup.

5. Chill and Garnish

  • Once all layers are completed, refrigerate cups for at least 2 more hours or until fully set.
  • Just before serving, garnish with whipped cream, sprinkles, fruit, or mini marshmallows if desired.
  • Prep Time: 45 minutes (active time)
  • Set Time: 4–6 hours (including chilling between layers)
