For the Crust:

  • 20 Oreo cookies (or any chocolate cookies), crushed into fine crumbs
  • 5 tablespoons unsalted butter, melted

For the Cheesecake Filling:

  • 2 (8-ounce) blocks cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup Nutella
  • ¼ cup sour cream (for extra creaminess)

For the Topping (Optional):

  • 2 tablespoons Nutella, melted (for swirling)
  • ¼ cup chopped hazelnuts (for garnish)

Instructions

Step 1: Prepare the Crust

Preheat your oven to 325°F (163°C). Line a 9×9-inch baking pan with parchment paper, leaving overhang on the sides for easy removal.

In a mixing bowl, combine the crushed Oreos and melted butter until the mixture resembles wet sand. Press the crumbs firmly into the bottom of the prepared baking dish, using the back of a spoon or a flat-bottomed glass.

Bake for 10 minutes, then set aside to cool slightly while you prepare the filling.

Step 2: Make the Nutella Cheesecake Filling

In a large bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream.

Now, add the Nutella and mix until the filling is completely smooth and fully combined. The mixture should be rich, creamy, and slightly thick.

Step 3: Assemble and Bake

Pour the Nutella cheesecake batter over the pre-baked crust, smoothing it into an even layer.

If you’re adding a Nutella swirl, warm 2 tablespoons of Nutella in the microwave for about 15 seconds until it becomes pourable. Drizzle it over the cheesecake layer and use a toothpick or knife to create a marbled swirl effect.

Bake the cheesecake bars for 35-40 minutes, or until the edges are set but the center still has a slight jiggle.

Step 4: Cool and Chill

Let the bars cool at room temperature for 1 hour. Then, transfer the pan to the fridge and chill for at least 4 hours (or overnight) to fully set.

Step 5: Slice and Serve

Once chilled, use the parchment paper overhang to lift the bars out of the pan. Place them on a cutting board and slice into 12 to 16 squares. For clean slices, wipe your knife with a damp cloth between cuts.

Top with chopped hazelnuts or an extra drizzle of Nutella, then serve and enjoy!
