Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon paprika
- Salt and black pepper, to taste

- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and sliced
- ½ red onion, thinly sliced
- ¼ cup sun-dried tomatoes, chopped
- ⅓ cup feta cheese, crumbled
- 2 tablespoons fresh parsley, chopped
- 1 lemon, sliced
- ½ teaspoon red pepper flakes (optional)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper.
Step 2: Season the Chicken
Place the chicken breasts in the baking dish and drizzle with olive oil. Rub the minced garlic, oregano, basil, paprika, salt, and black pepper evenly over each piece.
Step 3: Add the Mediterranean Toppings
Scatter the cherry tomatoes, olives, red onion, sun-dried tomatoes, and lemon slices around and on top of the chicken. Sprinkle with red pepper flakes for extra heat if desired.
Step 4: Bake the Chicken
Place the dish in the preheated oven and bake for 30-35 minutes, or until the chicken is fully cooked and reaches an internal temperature of 165°F (75°C).
Step 5: Add the Final Touches
Remove the chicken from the oven and sprinkle with crumbled feta cheese and fresh parsley. Let it rest for 5 minutes before serving.
