Ingredients
- 4 cod fillets (6 oz each)
- 2 tablespoons extra virgin olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- ½ cup Kalamata olives, pitted and sliced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup vegetable or chicken broth
- Juice of 1 lemon
- 2 tablespoons chopped fresh parsley
- Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or non-stick spray.
In a medium bowl, mix the olive oil, garlic, cherry tomatoes, olives, oregano, basil, red pepper flakes, salt, and black pepper. Stir well to combine and let the flavors blend.
Place the cod fillets in the prepared baking dish, leaving space between each piece. Pour the broth and lemon juice around the fish, helping to create a flavorful base.
Spoon the tomato and olive mixture evenly over each cod fillet, making sure to distribute it well so every bite is packed with flavor.
Transfer the dish to the preheated oven and bake for 12-15 minutes, or until the cod flakes easily with a fork. The internal temperature should reach 145°F (63°C).
Remove the dish from the oven and sprinkle with fresh parsley. Serve with lemon wedges for an extra burst of freshness. Enjoy immediately!
