Ingredients
For the Cod and Base Layer:
- 4 cod fillets (about 6 oz each)
- 2 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic, minced
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
For the Parmesan Topping:
- ½ cup grated Parmesan cheese
- ¼ cup panko breadcrumbs
- 2 tbsp melted butter
- 1 tsp dried oregano
- ½ tsp garlic powder
- Zest of 1 lemon
For Garnish:
- Fresh parsley, chopped
- Lemon wedges
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or cooking spray to prevent sticking.
Pat the cod fillets dry with a paper towel. Place them in the prepared baking dish. Drizzle olive oil and fresh lemon juice over the fillets. Sprinkle them evenly with minced garlic, salt, black pepper, and paprika for a burst of flavor.
In a small bowl, mix together grated Parmesan, panko breadcrumbs, melted butter, dried oregano, garlic powder, and lemon zest. Stir until the mixture is evenly combined and slightly crumbly.
Evenly distribute the Parmesan mixture over the cod fillets, pressing it gently to adhere. This will create a crispy, cheesy crust as it bakes.
Transfer the baking dish to the preheated oven and bake for 20-25 minutes or until the cod flakes easily with a fork and the topping is golden brown. If you’d like an extra crispy crust, turn on the broiler for the last 2 minutes of cooking.
Remove the dish from the oven and sprinkle with fresh chopped parsley. Serve immediately with lemon wedges on the side for an extra citrusy kick.
