1. Prepare the Rice: Cook the rice according to package instructions. Set aside to keep warm.
2. Blanch the Spinach: In a pot of boiling water, blanch the spinach for about 30 seconds. Drain and cool. Squeeze out excess water and season with a pinch of salt and a teaspoon of sesame oil.
