- 3 large egg whites, room temperature
- 1/4 tsp cream of tartar
- 1/2 cup granulated sugar
- 3 tbsp Jello powder (choose your favorite flavor)
- 1/2 tsp vanilla extract
- Food coloring (optional, to enhance color)
Instructions
Preheat your oven to 225°F (107°C). Line two baking sheets with parchment paper to prevent sticking.
In a clean, grease-free mixing bowl, beat the egg whites and cream of tartar on medium speed until soft peaks form. This should take about 2-3 minutes.
Slowly add granulated sugar one tablespoon at a time while continuing to beat the mixture. Then, gradually add the Jello powder, a little at a time. Continue beating until stiff, glossy peaks form—this can take 5-7 minutes.
Gently mix in the vanilla extract and, if desired, a drop or two of food coloring to enhance the color of your cookies.
Transfer the meringue mixture to a piping bag fitted with a star tip, or simply spoon small dollops onto the prepared baking sheets, spacing them about 1 inch apart.
Place the cookies in the preheated oven and bake for 1 hour. Do not open the oven during baking.
After baking, turn off the oven and let the meringues sit inside for another hour to cool completely. This prevents cracking and ensures they stay crisp.
Once cooled, remove the cookies from the baking sheet and enjoy! Store them in an airtight container at room temperature for up to a week.
