Follow these steps to create your delicious Jamaican Brown Stew Chicken:
1. Marinate the Chicken: In a large bowl, combine the chicken pieces with allspice, thyme, black pepper, and salt. Let it marinate for at least 30 minutes.
2. Heat the Oil: In a large pot, heat the vegetable oil over medium heat.
3. Brown the Chicken: Add the marinated chicken to the pot and brown it on all sides for about 5-7 minutes. Remove the chicken and set aside.
4. Sauté the Vegetables: In the same pot, add the sliced onion, bell pepper, garlic, and ginger. Sauté until the onion is translucent.
5. Add Carrots: Stir in the sliced carrots and cook for another 2-3 minutes.
6. Return the Chicken: Place the browned chicken back into the pot.
