Ingredients
For the Cookie Dough:
- 1 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1/4 teaspoon salt
For the Filling:
- 1/2 cup fruit jam or preserves (raspberry, strawberry, apricot, or your favorite variety)
Optional Garnish:
- Powdered sugar, for dusting after baking
Instructions
1. Prepare the Dough
-
In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
-
Add the egg yolk and vanilla extract, mixing until fully combined.
-
Gradually add the flour and salt, mixing just until a soft dough forms.
-
Divide the dough in half, wrap in plastic wrap, and chill for 30 minutes.
2. Shape the Cookies
-
Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
-
Roll the chilled dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
-
Use your thumb or the back of a small spoon to gently press a well into the center of each dough ball.
3. Add the Jam
-
Fill each indentation with about 1/2 teaspoon of jam.
-
Be careful not to overfill to avoid spillage during baking.
4. Bake the Cookies
-
Bake the cookies for 12–15 minutes, or until the edges are lightly golden.
-
Remove from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
5. Garnish and Serve
-
Once completely cooled, optionally dust the cookies with powdered sugar for an elegant finish.
-
Serve and enjoy, or store for later use.
