Instructions
Finely chop the dried apricots and toasted nuts if using. Soften the goat cheese by letting it sit at room temperature for 5–10 minutes, making it easier to mix.
In a medium bowl, combine the goat cheese, chopped apricots, honey, and cinnamon (if using). Stir until everything is evenly incorporated. If using, fold in the toasted nuts and fresh herbs for extra texture and flavor. Season with a small pinch of salt to enhance the flavors.
For a more structured presentation, transfer the mixture onto a sheet of plastic wrap and shape it into a log or ball. Wrap tightly and chill in the refrigerator for 30 minutes to firm up before serving.
