Hamburger Potato Soup

  • Author: Luna
  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound ground beef
  • 1 tablespoon olive oil (if needed)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 medium russet potatoes, peeled and diced
  • 4 cups beef broth
  • 1 cup milk
  • ½ cup heavy cream (optional, for extra creaminess)
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (optional, for garnish)
  • 2 tablespoons fresh parsley, chopped (for garnish)

For serving (optional):

  • Crusty bread
  • Crumbled turkey bacon
  • Sour cream for topping

Instructions

Step 1: Brown the Ground Beef

In a large pot or Dutch oven, cook the ground beef over medium heat until browned and fully cooked, breaking it up with a wooden spoon as it cooks. If needed, drain excess grease and return the beef to the pot.

Step 2: Sauté the Aromatics

If there isn’t enough grease left from the beef, add a tablespoon of olive oil. Then, stir in the diced onion and minced garlic. Sauté for 2-3 minutes until fragrant and the onion becomes soft and translucent.

Step 3: Add the Potatoes and Seasonings

Add the diced potatoes to the pot, followed by the Worcestershire sauce, dried thyme, smoked paprika, salt, and black pepper. Stir everything together, letting the potatoes absorb the flavors for about a minute.

Step 4: Pour in the Broth

Pour in the beef broth, making sure the potatoes are fully submerged. Bring the mixture to a gentle boil, then reduce the heat to a simmer. Cover and let it cook for about 15 minutes, or until the potatoes are fork-tender.

Step 5: Add the Milk and Cream

Once the potatoes are soft, stir in the milk and heavy cream. Let the soup simmer for another 5 minutes, stirring occasionally, to allow the flavors to meld together and create a creamy consistency.

Step 6: Mash Some of the Potatoes (Optional)

For a thicker soup, use a potato masher to lightly mash some of the potatoes directly in the pot. This will create a more creamy texture while still leaving some chunks for a hearty bite.

Step 7: Taste and Adjust Seasoning

Give the soup a taste and adjust the seasoning if needed. Add more salt, pepper, or Worcestershire sauce to enhance the flavors.

Step 8: Serve and Garnish

Ladle the soup into bowls and top with shredded cheddar cheese and fresh parsley. Serve with a side of crusty bread or crumbled turkey bacon for an extra treat.

Step 9: Enjoy!

Dig into this warm, comforting bowl of Hamburger Potato Soup and savor every bite. It’s the perfect meal to warm you up on a chilly day!
