Ingredients
- 2 large boneless, skinless chicken breasts (or 4 chicken thighs), cut into 1-inch cubes
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- ½ teaspoon paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons lemon juice
- ½ cup grated parmesan cheese
- 2 tablespoons fresh parsley, chopped
- ½ teaspoon red pepper flakes (optional, for a little heat)
- Skewers (wooden or metal)
For serving (optional):
- Extra parmesan for garnish
- Lemon wedges
- Garlic butter for drizzling
Instructions
Start by cutting the chicken into evenly sized 1-inch cubes. This ensures they cook at the same rate and remain juicy. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill.
In a large bowl, whisk together olive oil, minced garlic, Italian seasoning, paprika, salt, black pepper, and lemon juice. This flavorful marinade will infuse the chicken with bold, zesty flavors.
Add the chicken cubes to the bowl and toss until they are well coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. If you have more time, letting the chicken marinate for a few hours will deepen the flavors.
Thread the marinated chicken pieces onto skewers, leaving a little space between each piece for even cooking. If you like, you can alternate with pieces of bell peppers, cherry tomatoes, or onions for added color and flavor.
Preheat your grill to medium-high heat (around 375-400°F). Lightly grease the grill grates with oil to prevent sticking. If using a stovetop grill pan, heat it over medium-high heat and brush with oil.
Place the skewers on the preheated grill and cook for about 4-5 minutes per side, turning occasionally, until the chicken is golden brown and fully cooked. The internal temperature should reach 165°F for safe consumption.
Once the skewers are done cooking, immediately sprinkle them with grated parmesan cheese while they’re still hot. The heat will slightly melt the cheese, creating a deliciously savory coating.
Transfer the skewers to a serving platter and sprinkle with fresh chopped parsley. If you like a little heat, add a dash of red pepper flakes. Serve with lemon wedges on the side for an extra pop of brightness.
These Garlic Parmesan Chicken Skewers are best enjoyed hot off the grill. Pair them with a fresh salad, some fluffy rice, or garlic butter pasta for a complete meal.
