Ingredients
For the Cookie Crust:
- 2 cups crushed frosted animal cookies
- 6 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
For the Cheesecake Filling:
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 3 large eggs, room temperature
- 2 teaspoons vanilla extract
- 1 cup crushed frosted animal cookies
For the Whipped Topping and Garnish:
- 1 cup heavy whipping cream
- 3 tablespoons powdered sugar
- 1/2 teaspoon vanilla extract
- Whole frosted animal cookies (for decoration)
- Sprinkles (optional, for added color and texture)
Instructions
1. Prepare the Cookie Crust
-
Preheat your oven to 325°F (163°C).
-
In a medium bowl, mix crushed frosted animal cookies, melted butter, and sugar until the mixture resembles wet sand.
-
Press the mixture firmly into the bottom of a 9-inch springform pan, forming an even layer.
-
Bake for 10 minutes, then remove from the oven and set aside to cool while you prepare the filling.
2. Make the Cheesecake Filling
-
In a large mixing bowl, beat softened cream cheese until smooth and creamy.
-
Add sugar and continue beating until fully incorporated and fluffy.
-
Mix in sour cream and vanilla extract, blending until smooth.
-
Add eggs one at a time, beating after each addition just until incorporated—avoid overmixing.
-
Gently fold in crushed frosted animal cookies with a spatula, ensuring even distribution without overworking the batter.
3. Assemble and Bake
-
Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula.
-
Place the springform pan in a larger roasting pan and add hot water to the roasting pan (about halfway up the sides of the cheesecake pan) to create a water bath.
-
Bake for 55–65 minutes, or until the center is set but still slightly jiggly.
-
Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.
4. Chill the Cheesecake
-
After cooling, remove the cheesecake from the oven and water bath.
-
Run a knife around the edges to loosen it from the pan.
-
Cover and refrigerate for at least 6 hours, preferably overnight, to allow the flavors and texture to fully set.
5. Make Whipped Topping and Garnish
-
In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
-
Pipe or spoon the whipped cream over the chilled cheesecake.
-
Decorate with whole frosted animal cookies and sprinkles for a fun, festive finish.
