Frosted Animal Cookie Cheesecake

  • Author: Luna
  • Total Time: 7 hours 30 minutes
  • Yield: 12 slices 1x

Ingredients

Scale

For the Cookie Crust:

  • 2 cups crushed frosted animal cookies
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup crushed frosted animal cookies

For the Whipped Topping and Garnish:

  • 1 cup heavy whipping cream
  • 3 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Whole frosted animal cookies (for decoration)
  • Sprinkles (optional, for added color and texture)

Instructions

1. Prepare the Cookie Crust

  • Preheat your oven to 325°F (163°C).

  • In a medium bowl, mix crushed frosted animal cookies, melted butter, and sugar until the mixture resembles wet sand.

  • Press the mixture firmly into the bottom of a 9-inch springform pan, forming an even layer.

  • Bake for 10 minutes, then remove from the oven and set aside to cool while you prepare the filling.

2. Make the Cheesecake Filling

  • In a large mixing bowl, beat softened cream cheese until smooth and creamy.

  • Add sugar and continue beating until fully incorporated and fluffy.

  • Mix in sour cream and vanilla extract, blending until smooth.

  • Add eggs one at a time, beating after each addition just until incorporated—avoid overmixing.

  • Gently fold in crushed frosted animal cookies with a spatula, ensuring even distribution without overworking the batter.

3. Assemble and Bake

  • Pour the cheesecake filling over the pre-baked crust, smoothing the top with a spatula.

  • Place the springform pan in a larger roasting pan and add hot water to the roasting pan (about halfway up the sides of the cheesecake pan) to create a water bath.

  • Bake for 55–65 minutes, or until the center is set but still slightly jiggly.

  • Turn off the oven, crack the oven door, and let the cheesecake cool inside for 1 hour.

4. Chill the Cheesecake

  • After cooling, remove the cheesecake from the oven and water bath.

  • Run a knife around the edges to loosen it from the pan.

  • Cover and refrigerate for at least 6 hours, preferably overnight, to allow the flavors and texture to fully set.

5. Make Whipped Topping and Garnish

  • In a chilled bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  • Pipe or spoon the whipped cream over the chilled cheesecake.

  • Decorate with whole frosted animal cookies and sprinkles for a fun, festive finish.
