Ingredients
For the Cookies (Base):
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup brown sugar
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional, for extra flavor)
For the Nest Decoration:
- 1 cup shredded coconut (toasted or plain)
- ½ cup semi-sweet or milk chocolate chips (melted)
- 1 tablespoon heavy cream (for smoother chocolate)
- ½ cup Cadbury Mini Eggs, jelly beans, or M&M’s
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large mixing bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, and mix until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Scoop about 1 ½ tablespoons of dough and roll it into a ball. Place on the prepared baking sheet, spacing them 2 inches apart.
Use your thumb or the back of a spoon to make an indentation in the center of each dough ball to form the nest shape.
Bake for 10-12 minutes, or until the edges are lightly golden. If the indentations puff up while baking, press them down gently with the back of a spoon while the cookies are still warm.
Allow the cookies to cool completely before decorating.
In a microwave-safe bowl, melt the chocolate chips and heavy cream in 20-second intervals, stirring in between, until smooth.
Spoon or pipe melted chocolate into the center of each cookie nest. Sprinkle with shredded coconut, then place 3-4 Mini Eggs or jelly beans in each nest before the chocolate sets.
Let the cookies sit at room temperature for 15 minutes or refrigerate for a quicker setting. Serve and enjoy these adorable Easter treats!
