For the Frosting (Optional):

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons heavy cream (or milk)
  • ½ teaspoon vanilla extract
  • Pastel food coloring (optional)
  • Extra sprinkles and mini chocolate eggs for garnish

Instructions

Step 1: Preheat the Oven and Prepare the Pan

Preheat your oven to 350°F (175°C). Lightly grease a 9-inch round cake pan or springform pan and line the bottom with parchment paper to prevent sticking.

Step 2: Cream the Butter and Sugars

In a large mixing bowl, beat the butter, brown sugar, and granulated sugar together until light and fluffy, about 2 minutes. This step helps create a soft and chewy texture.

Step 3: Add the Eggs and Vanilla

Mix in the eggs, one at a time, followed by the vanilla extract. Beat until smooth and well combined.

Step 4: Mix the Dry Ingredients

In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Step 5: Fold in the Mix-Ins

Gently fold in the M&M’s, chocolate chips, and sprinkles, reserving a handful for decorating the top before baking.

Step 6: Press the Dough into the Pan

Spread the cookie dough evenly into the prepared pan. Press the reserved candies and sprinkles on top for a festive look.

Step 7: Bake to Perfection

Bake for 20-25 minutes, or until the edges are golden brown and the center is set but still slightly soft. The cookie cake will continue to firm up as it cools.

Step 8: Cool Completely

Let the cookie cake cool in the pan for 15-20 minutes, then transfer it to a wire rack to cool completely before frosting.

Step 9: Prepare the Frosting (Optional)

While the cookie cake is cooling, make the frosting. Beat the butter and powdered sugar together until smooth. Add the heavy cream and vanilla extract, continuing to beat until fluffy. If desired, mix in pastel food coloring.
