Easter Bunny Chow

  • Author: Luna
  • Total Time: 30 minutes
  • Yield: Approximately 10 cups 1x

Ingredients

Scale
  • 9 cups rice or corn cereal squares (such as crispy rice cereal)
  • 1½ cups white chocolate chips or vanilla baking melts
  • ½ cup creamy nut-free spread or seed butter (optional, for richness)
  • 1½ cups powdered sugar
  • 1 cup candy-coated chocolates (spring/Easter colors)
  • 1 cup mini pretzels (twists or sticks)
  • 1 cup mini marshmallows
  • ½ cup pastel-colored sprinkles or sugar pearls
  • Optional: edible glitter, jelly beans, crushed freeze-dried strawberries

Instructions

1. Prepare the Cereal Base

  • Measure the cereal into a large mixing bowl.
  • Make sure the bowl is big enough to stir and toss the mixture without spilling.
  • Set aside the powdered sugar in a separate large bowl or zip-top bag for coating.

2. Melt the White Chocolate

  • In a microwave-safe bowl, add white chocolate chips (and nut-free spread if using).
  • Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  • Be careful not to overheat, as white chocolate can burn easily.

3. Coat the Cereal

  • Pour the melted chocolate over the cereal mixture.
  • Gently fold and stir with a spatula until all cereal pieces are evenly coated.
  • Work quickly before the chocolate begins to harden.

4. Add the Powdered Sugar

  • Transfer the coated cereal into a large zip-top bag or bowl with powdered sugar.
  • Seal the bag and shake well until all pieces are coated in sugar.
  • If using a bowl, toss gently with a spoon or your hands.

5. Mix in Easter Add-ins

  • Spread the coated cereal onto a parchment-lined baking sheet.
  • Sprinkle in candy-coated chocolates, pretzels, mini marshmallows, and sprinkles.
  • Toss gently to combine without breaking the cereal pieces.
  • Allow to cool and set completely before storing.

6. Serve or Package

  • Scoop the Bunny Chow into bowls, jars, or treat bags.
  • Decorate with additional sprinkles or ribbons for a festive touch.
  • Store in an airtight container until ready to serve.
  • Prep Time: 15 minutes
