Instructions

Step 1: Boil the Eggs

  1. Place the eggs in a single layer in a saucepan and cover with water.
  2. Bring to a rolling boil, then cover and remove from heat. Let sit for 10 minutes.
  3. Transfer the eggs to an ice bath and let cool for 5 minutes before peeling.

Step 2: Prepare the Deviled Egg Filling

  1. Slice each egg horizontally, rather than the usual lengthwise cut, so they resemble little baskets.
  2. Carefully scoop out the yolks into a bowl, setting the whites aside.
  3. Mash the yolks with a fork, then mix in mayonnaise, mustard, vinegar, salt, pepper, and paprika until smooth and creamy.
  4. Spoon or pipe the mixture back into the egg whites, slightly mounding it at the top for a full basket effect.

Step 3: Assemble the Basket Decorations

  1. Make the handle: Take a long chive or a strip of green onion and gently bend it into an arch, pressing each end into the egg to form a basket handle. If needed, secure with a small toothpick until set.
  2. Add the “Easter eggs” decoration: Sprinkle small diced pieces of bell peppers, cherry tomatoes, or even radishes on top of the filling to resemble tiny eggs.
  3. Garnish with fresh herbs like parsley or dill for an extra pop of color.
  4. Lightly dust with paprika for a finishing touch.
