For the Mojo Pork (if making from scratch):

  • 1 lb boneless pork shoulder or loin
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 tablespoons orange juice
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Sandwich:

  • 4 Cuban bread rolls (or substitute with French or Italian bread)
  • 4 tablespoons yellow mustard
  • ½ lb turkey ham or beef ham, thinly sliced
  • ½ lb roasted mojo pork, sliced
  • 8 slices Swiss cheese
  • ½ cup sliced dill pickles
  • 2 tablespoons butter, softened

Instructions

Step 1: Prepare the Mojo Pork

If you’re making your own mojo pork, preheat the oven to 350°F (175°C). In a bowl, mix olive oil, garlic, orange juice, lime juice, cumin, oregano, salt, and pepper. Rub this mixture over the pork and let it marinate for at least 30 minutes (or overnight for deeper flavor).

Place the pork in a baking dish, cover with foil, and bake for 1 hour, or until tender. Let it rest before slicing thinly.

Step 2: Slice and Prepare the Bread

Cut the Cuban bread rolls in half lengthwise. If you don’t have Cuban bread, a crusty French baguette or Italian bread works well as a substitute. Spread yellow mustard on both halves of the bread.

Step 3: Layer the Ingredients

Start by layering Swiss cheese on one side of the bread. Then add a layer of mojo pork, followed by sliced turkey ham or beef ham, and finally sliced dill pickles. Place another slice of Swiss cheese on top before closing the sandwich.

Step 4: Butter and Grill

Spread softened butter on the outside of the bread to get that signature golden crispness. Heat a large pan or griddle over medium heat. If you have a panini press, that works even better!

Place the sandwich in the pan and press it down using a heavy skillet or another pan. Cook for about 3-4 minutes per side, pressing down gently until the bread is crispy and the cheese is melted.

Step 5: Slice and Serve

Once the sandwich is golden brown and heated through, remove it from the pan, slice it diagonally, and serve hot. Enjoy your authentic Cuban Sandwich!
