Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.

  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.

  3. Press the crumb mixture firmly into the bottom of the prepared pan. Use the back of a spoon or a flat-bottomed glass to even it out.

  4. Bake for 10 minutes, then set aside to cool while you prepare the filling.

Step 2: Make the Coffee Cheesecake Filling

  1. In a small bowl, dissolve the instant coffee granules in hot water. Stir well and let it cool slightly.

  2. In a large mixing bowl, beat the cream cheese and sugar together on medium speed until smooth and creamy.

  3. Add the sour cream and vanilla extract, mixing until fully combined.

  4. Add the eggs, one at a time, beating on low speed after each addition until just incorporated.

  5. Pour in the dissolved coffee mixture, blending until the batter is smooth and evenly flavored.

Step 3: Bake the Cheesecake

  1. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.

  2. Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.

  3. Turn off the oven and crack the oven door slightly. Let the cheesecake sit inside for 1 hour to prevent cracks.

  4. Remove the cheesecake from the oven and let it cool to room temperature before transferring it to the refrigerator.

Step 4: Chill the Cheesecake

  1. Cover the cheesecake loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.

Step 5: Make the Coffee Whipped Cream (Optional)

  1. In a mixing bowl, combine heavy whipping cream, powdered sugar, and instant coffee granules.

  2. Whip on high speed until stiff peaks form.
