Ingredients
For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
For the Coffee Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 1/2 cup sour cream
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 tablespoon instant coffee granules (or espresso powder)
- 2 tablespoons hot water (to dissolve coffee)
For the Coffee Whipped Cream Topping (Optional):
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 teaspoon instant coffee granules
Instructions
Step 1: Prepare the Crust
-
Preheat your oven to 325°F (163°C) and lightly grease a 9-inch springform pan.
-
In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Stir until the mixture resembles wet sand.
-
Press the crumb mixture firmly into the bottom of the prepared pan. Use the back of a spoon or a flat-bottomed glass to even it out.
-
Bake for 10 minutes, then set aside to cool while you prepare the filling.
Step 2: Make the Coffee Cheesecake Filling
-
In a small bowl, dissolve the instant coffee granules in hot water. Stir well and let it cool slightly.
-
In a large mixing bowl, beat the cream cheese and sugar together on medium speed until smooth and creamy.
-
Add the sour cream and vanilla extract, mixing until fully combined.
-
Add the eggs, one at a time, beating on low speed after each addition until just incorporated.
-
Pour in the dissolved coffee mixture, blending until the batter is smooth and evenly flavored.
Step 3: Bake the Cheesecake
-
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
-
Bake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle.
-
Turn off the oven and crack the oven door slightly. Let the cheesecake sit inside for 1 hour to prevent cracks.
-
Remove the cheesecake from the oven and let it cool to room temperature before transferring it to the refrigerator.
Step 4: Chill the Cheesecake
-
Cover the cheesecake loosely with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to develop.
Step 5: Make the Coffee Whipped Cream (Optional)
-
In a mixing bowl, combine heavy whipping cream, powdered sugar, and instant coffee granules.
-
Whip on high speed until stiff peaks form.
-
Pipe or spread the coffee whipped cream over the chilled cheesecake before serving.
Step 6: Serve and Enjoy!
-
Run a knife around the edge of the springform pan before releasing the cheesecake.
-
Slice and serve with an extra dusting of cocoa powder or chocolate shavings, if desired.
