  • Author: Luna
  • Total Time: 45 minutes

Ingredients

– 2 cups jasmine rice
– 1 lb chicken breast, cut into bite-sized pieces
– 1 can (14 oz) coconut milk
– 1 cup chicken broth
– 2 tablespoons soy sauce
– 1 tablespoon fish sauce
– 2 tablespoons vegetable oil
– 2 cloves garlic, minced
– 1 tablespoon fresh ginger, grated
– 1 tablespoon brown sugar
– 1 teaspoon turmeric powder
– 1 teaspoon curry powder
– 1 teaspoon salt
– ¼ teaspoon black pepper
– Fresh cilantro, for garnish
– Lime wedges, for serving

Instructions

Creating a delicious Coconut Chicken Rice Bowl is simple. Just follow these steps:

1. Rinse the jasmine rice under cold water until the water runs clear. Drain well.
2. In a medium pot, combine the rinsed rice, coconut milk, chicken broth, and a pinch of salt. Bring to a boil over medium heat.
3. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice is tender and liquid is absorbed. Remove from heat and let it sit covered for another 5 minutes.
4. While the rice is cooking, heat the vegetable oil in a large skillet over medium-high heat.
5. Add the minced garlic and grated ginger to the skillet, sautéing for about 1 minute until fragrant.
6. Add the chicken pieces to the skillet. Cook until the chicken is browned and no longer pink in the center, about 5-7 minutes.
7. Stir in the soy sauce, fish sauce, brown sugar, turmeric, curry powder, salt, and black pepper. Cook for another 2-3 minutes until the chicken is well-coated and the sauce thickens slightly.
8. Fluff the cooked jasmine rice with a fork and divide it among serving bowls.
9. Top each bowl of rice with the coconut chicken mixture.
10. Garnish with fresh cilantro and serve with lime wedges on the side for an extra burst of flavor.
