Chicken Teriyaki Burgers

For the Chicken Patties:

  • 1 lb ground chicken (or boneless chicken breasts, if grilling whole)
  • 2 tbsp soy sauce
  • 1 tsp ginger, grated
  • 2 cloves garlic, minced
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp green onions, chopped
  • 1/4 cup panko breadcrumbs (for texture)
  • 1 egg (optional, for binding)

For the Teriyaki Sauce:

  • 1/3 cup soy sauce
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp ginger, grated
  • 1 clove garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)

For Assembling the Burgers:

  • 4 burger buns (toasted)
  • 1/2 cup mayonnaise
  • 1 tsp sriracha (optional, for spicy mayo)
  • 4 pineapple slices (grilled, optional)
  • 4 lettuce leaves
  • 1/2 cup shredded carrots
  • 1/4 cup sliced red onion
  • 1 tbsp sesame seeds (for garnish)

Instructions

Step 1: Make the Teriyaki Sauce

In a small saucepan, combine soy sauce, honey, brown sugar, rice vinegar, sesame oil, ginger, and garlic over medium heat. Stir and bring to a simmer.

In a separate bowl, mix cornstarch with water, then slowly add it to the sauce while stirring. Continue to cook for 2-3 minutes until the sauce thickens. Remove from heat and set aside.

Step 2: Prepare the Chicken Patties

In a large bowl, mix ground chicken, soy sauce, ginger, garlic, black pepper, salt, green onions, panko breadcrumbs, and egg (if using). Form into 4 equal-sized patties.

If using whole chicken breasts, pound them slightly to even thickness and marinate them in 2 tablespoons of teriyaki sauce for at least 15 minutes.

Step 3: Cook the Chicken Patties

For grilling: Preheat the grill to medium-high heat and lightly oil the grates. Cook patties for 5-6 minutes per side or until fully cooked (internal temperature of 165°F).

For stovetop cooking: Heat a pan over medium heat, add a little oil, and cook patties for 5-7 minutes per side until golden brown and cooked through.

During the last 2 minutes of cooking, brush the patties generously with teriyaki sauce to create a sticky glaze.

Step 4: Toast the Buns & Prepare the Toppings

Toast the burger buns lightly on the grill or in a pan for extra flavor.

In a small bowl, mix mayonnaise and sriracha to make a spicy mayo spread.

Step 5: Assemble the Burgers

Spread a layer of spicy mayo on the bottom bun, place the teriyaki-glazed chicken patty on top, and add a grilled pineapple slice for extra sweetness. Top with lettuce, shredded carrots, and red onions. Sprinkle sesame seeds on top before adding the bun.

Step 6: Serve & Enjoy!

Serve immediately with a side of fries, a fresh salad, or even a teriyaki-glazed coleslaw for a complete meal.
