Instructions
Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray to prevent sticking.
Place each chicken breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound them to about ¼-inch thickness. This will make them easier to roll and ensure even cooking.
In a small bowl, mix the melted butter, minced garlic, oregano, basil, garlic powder, salt, and black pepper. This will be the flavorful base for your chicken rolls.
Sprinkle a generous amount of mozzarella and Parmesan cheese evenly over each flattened chicken breast. Leave a small border around the edges to prevent the filling from spilling out when rolling.
Starting from one end, carefully roll up each chicken breast tightly, securing the cheese inside. You can use toothpicks to keep them from unraveling during baking.
Brush each roll with the garlic butter mixture, ensuring that it covers the entire surface. Then, roll each chicken piece in breadcrumbs, pressing gently to help them adhere. This will create a crispy, golden-brown crust.
Place the coated chicken rolls seam-side down in the prepared baking dish. Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
For an extra crispy topping, switch your oven to broil for the last 2-3 minutes of cooking. Keep a close eye on them to prevent burning.
Remove the toothpicks and let the chicken rolls rest for a few minutes. Sprinkle with fresh parsley and serve with a side of warm marinara sauce for dipping.
