Ingredients
- 2 cups cod fillets, cooked and flaked
- 1 cup shredded mozzarella cheese
- ½ cup Parmesan cheese, grated
- 1 cup mashed potatoes
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon garlic powder
- ½ teaspoon black pepper
- ½ teaspoon salt
- ½ teaspoon paprika
- 1 large egg
- 1 cup breadcrumbs (for coating)
- ½ cup flour (for coating)
- 1 extra egg, beaten (for coating)
- Vegetable oil, for frying
Instructions
In a large mixing bowl, combine the flaked cod, mashed potatoes, mozzarella cheese, Parmesan cheese, parsley, garlic powder, black pepper, salt, and paprika. Mix well until all the ingredients are fully incorporated.
Take a small amount of the mixture (about a tablespoon) and roll it into a ball. Repeat with the remaining mixture until you have evenly sized fish balls.
Set up three bowls: one with flour, one with the beaten egg, and one with breadcrumbs. Roll each fish ball in flour, dip it in the beaten egg, and then coat it with breadcrumbs. Make sure each ball is evenly covered for a crispy coating.
In a deep pan or fryer, heat vegetable oil over medium heat until it reaches 350°F (175°C). Test by dropping a small breadcrumb into the oil; if it sizzles, it’s ready.
Carefully place the coated fish balls into the hot oil. Fry them in batches to avoid overcrowding the pan. Cook for about 3-4 minutes, turning occasionally, until golden brown and crispy.
Remove the fish balls from the oil and place them on a paper towel-lined plate to absorb excess oil. Let them cool for a minute before serving.
