Cheesy Cauliflower Steaks

  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional, for heat)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

Step 1: Prepare the Cauliflower

Remove the outer leaves from the cauliflower and trim the stem slightly, being careful not to remove too much (this helps keep the steaks intact). Place the cauliflower on a cutting board and slice it into thick, even steaks—each about ¾ to 1 inch thick. You should get about 3-4 steaks from a large cauliflower head.

Step 2: Season the Steaks

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil. Arrange the cauliflower steaks on the baking sheet. Drizzle with olive oil and season evenly with salt, black pepper, garlic powder, smoked paprika, and red pepper flakes (if using).

Step 3: Roast the Cauliflower

Place the baking sheet in the oven and roast the cauliflower steaks for 20 minutes. Flip them carefully using a spatula, then roast for another 10 minutes, or until the edges are golden and crispy.

Step 4: Add the Cheese

Remove the baking sheet from the oven and sprinkle the shredded mozzarella, grated Parmesan, and dried oregano evenly over the cauliflower steaks. Return them to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.

Step 5: Garnish and Serve

Once out of the oven, sprinkle the cauliflower steaks with freshly chopped parsley for a pop of color and freshness. Serve immediately while warm and gooey.
