For the Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 small carrot, grated
- ½ cup bell peppers, diced (any color)
- ½ cup zucchini, grated
- ½ cup mushrooms, finely chopped
- 1 cup baby spinach, chopped
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- ½ teaspoon red pepper flakes (optional, for heat)
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
For the Dough/Wrapper:
- 10–12 spring roll wrappers, phyllo dough sheets, or tortilla wraps
- 2 tablespoons butter or olive oil, for brushing
For Garnishing & Serving:
- 2 tablespoons chopped fresh parsley
- ½ teaspoon red pepper flakes (optional)
- Marinara sauce, ranch, or garlic yogurt dip for serving
Instructions
Step 1: Prepare the Vegetable Filling
- Heat olive oil in a pan over medium heat.
- Add the onion and sauté until soft (about 2 minutes).
- Stir in the carrots, bell peppers, zucchini, and mushrooms. Cook for 4-5 minutes, stirring occasionally, until the vegetables soften.
- Add the spinach, season with salt, black pepper, garlic powder, Italian seasoning, and red pepper flakes, and cook for 1-2 more minutes until the spinach wilts.
- Remove from heat and let the mixture cool slightly.
Step 2: Add the Cheese
- Once the vegetable mixture has cooled, stir in the shredded mozzarella and Parmesan cheese.
- Mix well to create a cheesy, veggie-packed filling.
Step 3: Assemble the Rolls
- Lay out one wrapper (spring roll wrapper, phyllo dough, or tortilla).
- Place 2 tablespoons of the filling near the bottom edge.
- Roll the wrapper tightly, folding in the sides as you go to create a sealed roll.
- Repeat with the remaining wrappers and filling.
Step 4: Brush and Bake
- Preheat your oven to 375°F (190°C).
- Arrange the rolls on a baking sheet lined with parchment paper.
- Lightly brush each roll with melted butter or olive oil to help them turn golden brown.
- Bake for 20-25 minutes, flipping halfway, until the rolls are crispy and golden brown.
Step 5: Serve and Enjoy!
- Garnish with chopped parsley and red pepper flakes.
- Serve hot with marinara sauce, ranch, or garlic yogurt dip.
