- 1 lb ground beef (80/20 blend for best flavor)
- 1/2 cup yellow onion, finely diced
- 1/2 cup dill pickles, finely chopped
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese (optional, for extra gooeyness)
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 12 egg roll wrappers
- 1 egg (for sealing the wrappers)
- Oil for frying (vegetable or canola oil)

- Classic burger sauce (mayo + ketchup + mustard + relish)
- Spicy sriracha mayo
- Ranch dressing
Instructions
Start by heating a large skillet over medium-high heat. Add the ground beef and break it up with a spatula as it cooks. Once it starts to brown, toss in the diced onions and continue cooking until the onions are soft and the beef is fully browned. Drain any excess grease to keep the filling from becoming too oily.
Once drained, return the beef to the pan and add ketchup, mustard, Worcestershire sauce, salt, black pepper, and garlic powder. Stir everything together and let it cook for another minute or two to ensure all the flavors meld. Remove from heat and let the mixture cool slightly before adding the cheese. Stir in the shredded cheddar and mozzarella until they melt into the beef mixture, creating a rich, cheesy filling.
Lay out an egg roll wrapper on a clean, dry surface in a diamond shape (one corner pointing toward you). Place about 2 tablespoons of the beef mixture in the center. Sprinkle a few chopped pickles over the top for that true cheeseburger taste.
To roll, fold the bottom corner up over the filling, then fold in the sides. Brush a little beaten egg along the edges to help seal the wrapper. Roll it up tightly, pressing the edge down to seal completely. Repeat until all the wrappers are filled.
Heat about 2 inches of vegetable or canola oil in a deep pan or fryer to 350°F (175°C). Carefully place a few egg rolls into the hot oil, being careful not to overcrowd the pan. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
Remove the egg rolls with a slotted spoon and place them on a paper towel-lined plate to drain any excess oil. Repeat until all egg rolls are cooked.
Let the egg rolls cool for a couple of minutes before serving. Slice them diagonally for a fun presentation, and serve with your favorite dipping sauces!
