For the Pretzel Dough:
- 2 ¼ teaspoons (1 packet) active dry yeast
- 1 ½ cups warm water (110°F / 43°C)
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 4 cups all-purpose flour (plus extra for dusting)
- 2 tablespoons unsalted butter, melted

- 4 cups water
- ¼ cup baking soda
For Topping:
- Coarse salt (for savory)

Instructions
1. Prepare the yeast mixture
- In a large mixing bowl, combine warm water, sugar, and yeast
- Stir gently and let sit for 5–10 minutes until foamy and activated
2. Make the dough
- Add salt and melted butter to the yeast mixture
- Gradually stir in flour, one cup at a time, until a soft dough forms
- Knead dough on a floured surface for 5–7 minutes until smooth and elastic
3. Let the dough rise
- Place dough in a greased bowl, cover with a towel or plastic wrap
- Let rise in a warm place for 45–60 minutes or until doubled in size
4. Prepare the baking soda bath
- In a saucepan, bring water and baking soda to a simmer
- Keep warm on low heat while shaping the pretzels
5. Shape the bunny pretzels
- Preheat oven to 425°F (220°C) and line two baking sheets with parchment paper
- Punch down the risen dough and divide into 12 equal pieces
- Roll each piece into a long rope (about 18 inches)
- Shape each rope into a loop with ears by forming an oval and twisting the ends into bunny ear shapes
- Place each shaped bunny on the prepared baking sheets
6. Dip in baking soda bath
- Gently dip each pretzel in the baking soda bath for about 20 seconds
- Use a slotted spatula to remove and place back on the baking sheet
- Sprinkle with coarse salt for savory or leave plain for sweet versions
7. Bake the pretzels
- Bake for 12–15 minutes or until golden brown and puffed
- Remove from oven and brush with melted butter while warm
8. Add sweet toppings (optional)
- For sweet pretzels, sprinkle with cinnamon sugar while warm
- Alternatively, drizzle with icing, melted chocolate, or decorate with sprinkles
