  • ½ cup almond flour (or coconut flour for a nut-free option)
  • 1 tablespoon Greek yogurt (for extra protein and softness)
  • 1 teaspoon baking powder
  • 1 egg

For the Garlic Butter & Topping

  • 2 tablespoons butter (or ghee, for a lighter option)
  • 2 cloves garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese (for topping)
  • ¼ cup grated parmesan cheese

For Dipping (Optional, Low-Carb Marinara Sauce)

  • ½ cup no-sugar-added marinara sauce
  • ½ teaspoon dried basil
  • ½ teaspoon garlic powder

Instructions

Step 1: Prepare the Dough

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, melt the shredded mozzarella cheese for 30 seconds, stirring until smooth.
  3. Add the almond flour, Greek yogurt, baking powder, and egg to the melted cheese. Mix well until a dough forms. If sticky, knead with your hands for a few seconds.

Step 2: Shape and Bake the Base

  1. Place the dough on the parchment-lined baking sheet.
  2. Press it into a rectangular shape, about ¼ inch thick.
  3. Bake for 10 minutes, or until it starts to turn golden brown.

Step 3: Prepare the Garlic Butter

  1. While the dough is baking, melt the butter in a small pan.
  2. Stir in the minced garlic, oregano, parsley, salt, and black pepper.

Step 4: Add Cheese and Bake Again

  1. Once the dough is golden, remove from the oven.
  2. Brush the garlic butter evenly over the surface.
  3. Sprinkle with mozzarella and parmesan cheese.
  4. Return to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.

Step 5: Slice and Serve!

  1. Let the garlic cheese fingers cool for a couple of minutes before slicing into strips.
  2. Serve with low-carb marinara sauce for dipping.
