For the Low-Carb Dough
- 1 cup shredded mozzarella cheese
- ½ cup almond flour (or coconut flour for a nut-free option)
- 1 tablespoon Greek yogurt (for extra protein and softness)
- 1 teaspoon baking powder
- 1 egg
For the Garlic Butter & Topping
- 2 tablespoons butter (or ghee, for a lighter option)
- 2 cloves garlic, minced
- ½ teaspoon dried oregano
- ½ teaspoon dried parsley
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ cup shredded mozzarella cheese (for topping)
- ¼ cup grated parmesan cheese
For Dipping (Optional, Low-Carb Marinara Sauce)
- ½ cup no-sugar-added marinara sauce
- ½ teaspoon dried basil
- ½ teaspoon garlic powder
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt the shredded mozzarella cheese for 30 seconds, stirring until smooth.
- Add the almond flour, Greek yogurt, baking powder, and egg to the melted cheese. Mix well until a dough forms. If sticky, knead with your hands for a few seconds.
Step 2: Shape and Bake the Base
- Place the dough on the parchment-lined baking sheet.
- Press it into a rectangular shape, about ¼ inch thick.
- Bake for 10 minutes, or until it starts to turn golden brown.
Step 3: Prepare the Garlic Butter
- While the dough is baking, melt the butter in a small pan.
- Stir in the minced garlic, oregano, parsley, salt, and black pepper.
Step 4: Add Cheese and Bake Again
- Once the dough is golden, remove from the oven.
- Brush the garlic butter evenly over the surface.
- Sprinkle with mozzarella and parmesan cheese.
- Return to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
Step 5: Slice and Serve!
- Let the garlic cheese fingers cool for a couple of minutes before slicing into strips.
- Serve with low-carb marinara sauce for dipping.
