For the Quiche Crust:
- 1 ½ cups all-purpose flour

- ½ cup unsalted butter, chilled and cut into cubes
- 3–4 tablespoons ice water

For the Quiche Filling:
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 clove garlic, minced
- 1 bunch asparagus, trimmed and cut into 1-inch pieces
- 4 large eggs
- 1 cup milk (or half-and-half for a creamier texture)
- ½ cup shredded Gruyère or cheddar cheese
- ¼ cup Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon nutmeg (optional, but adds depth of flavor)
Instructions
Step 1: Prepare the Quiche Crust
- In a large bowl, whisk together the flour and salt.
- Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture looks like coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
- Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
- Roll out the dough on a floured surface and press it into a 9-inch pie pan. Trim any excess and crimp the edges.
- Preheat the oven to 375°F (190°C).
- Place parchment paper over the crust and fill it with pie weights or dried beans.
- Bake for 10 minutes, then remove the parchment and bake for another 5 minutes until lightly golden.
(Skip these steps if using a store-bought crust!)
Step 2: Cook the Vegetables
- Heat olive oil in a skillet over medium heat.
- Add the onion and sauté for 2–3 minutes until softened.
- Stir in the garlic and cook for another 30 seconds.
- Add the asparagus pieces and sauté for 2 minutes, just until slightly tender. Remove from heat and set aside.
Step 3: Make the Quiche Filling
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
- Stir in shredded Gruyère (or cheddar) and Parmesan cheese.
- Add the sautéed asparagus mixture and gently combine.
Step 4: Assemble and Bake the Quiche
- Pour the filling into the pre-baked crust.
- Smooth the top and arrange a few extra asparagus spears on top for decoration.
- Bake at 375°F (190°C) for 30–35 minutes, or until the center is set and slightly golden.
- Let the quiche cool for 5–10 minutes before slicing and serving.
