For the Quiche Crust:

For the Quiche Filling:

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 4 large eggs
  • 1 cup milk (or half-and-half for a creamier texture)
  • ½ cup shredded Gruyère or cheddar cheese
  • ¼ cup Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon nutmeg (optional, but adds depth of flavor)

Instructions

Step 1: Prepare the Quiche Crust

  1. In a large bowl, whisk together the flour and salt.
  2. Add the chilled butter cubes and use a pastry cutter or your fingers to blend until the mixture looks like coarse crumbs.
  3. Gradually add ice water, 1 tablespoon at a time, until the dough comes together.
  4. Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Roll out the dough on a floured surface and press it into a 9-inch pie pan. Trim any excess and crimp the edges.
  6. Preheat the oven to 375°F (190°C).
  7. Place parchment paper over the crust and fill it with pie weights or dried beans.
  8. Bake for 10 minutes, then remove the parchment and bake for another 5 minutes until lightly golden.

(Skip these steps if using a store-bought crust!)

Step 2: Cook the Vegetables

  1. Heat olive oil in a skillet over medium heat.
  2. Add the onion and sauté for 2–3 minutes until softened.
  3. Stir in the garlic and cook for another 30 seconds.
  4. Add the asparagus pieces and sauté for 2 minutes, just until slightly tender. Remove from heat and set aside.

Step 3: Make the Quiche Filling

  1. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  2. Stir in shredded Gruyère (or cheddar) and Parmesan cheese.
  3. Add the sautéed asparagus mixture and gently combine.

Step 4: Assemble and Bake the Quiche

  1. Pour the filling into the pre-baked crust.
  2. Smooth the top and arrange a few extra asparagus spears on top for decoration.
  3. Bake at 375°F (190°C) for 30–35 minutes, or until the center is set and slightly golden.
  4. Let the quiche cool for 5–10 minutes before slicing and serving.
