For the Dough:

  • 4 cups (500g) all-purpose flour
  • 1 packet (2 ¼ teaspoons) instant yeast
  • ½ cup (120ml) warm milk (about 110°F / 43°C)
  • ⅓ cup (67g) granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ½ cup (113g) unsalted butter, softened

For Topping:

  • 2 tablespoons melted butter (for brushing)
  • ½ cup powdered sugar (for dusting)

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, warm the milk until it reaches 110°F (43°C)—not too hot, or it will kill the yeast.
  2. Stir in 1 tablespoon of sugar and the yeast. Let it sit for 5–10 minutes, until it becomes foamy (this means the yeast is activated).

Step 2: Make the Dough

  1. In a large mixing bowl, whisk together the flour, remaining sugar, and salt.
  2. Add the eggs, egg yolks, vanilla extract, and activated yeast mixture.
  3. Mix until a soft dough begins to form.

Step 3: Knead and Add Butter

  1. Transfer the dough to a lightly floured surface and knead for about 5 minutes, until smooth.
  2. Gradually add the softened butter, kneading after each addition, until the dough becomes soft and elastic (about 8–10 minutes total).
  3. If using a stand mixer, knead with the dough hook for 8 minutes on medium speed.

Step 4: First Rise

  1. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1–1.5 hours, or until doubled in size.

Step 5: Shape the Rolls

  1. Punch down the dough to release air and divide it into 12 equal pieces.
  2. Roll each piece into a long rope (about 12 inches long), then coil it into a spiral shape.
  3. Place the shaped rolls on a parchment-lined baking sheet, leaving space between them.

Step 6: Second Rise

  1. Cover the shaped rolls with a kitchen towel and let them rise for another 30 minutes, until puffy.

Step 7: Bake the Rolls

  1. Preheat your oven to 350°F (175°C).
  2. Bake the rolls for 12–15 minutes, until lightly golden.

Step 8: Finish with Butter and Sugar

  1. While the rolls are still warm, brush them with melted butter.
  2. Generously dust with powdered sugar before serving.
