Ingredients
For the Dough:
- 1 cup active sourdough starter
- 2 ½ cups all-purpose flour (or bread flour for extra chewiness)
- ½ cup warm water
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder (optional, for extra flavor)
For the Topping:
- 2 tablespoons melted butter or olive oil
- 1 ½ cups shredded mozzarella cheese
- ¼ cup shredded parmesan cheese
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon red pepper flakes (optional, for a spicy kick)
Instructions
In a large mixing bowl, combine the sourdough starter, warm water, olive oil, salt, and garlic powder. Gradually add in the flour, stirring with a wooden spoon until a shaggy dough forms.
Transfer the dough to a lightly floured surface and knead for about 5–7 minutes, or until it becomes smooth and elastic. You can also use a stand mixer with a dough hook for about 4–5 minutes on medium speed.
Place the dough in a greased bowl, cover it with a damp towel, and let it rise in a warm spot for 3–4 hours, or until it doubles in size.
Once the dough has risen, punch it down to release excess air. Roll it out into a 9×12-inch rectangle on a lightly floured surface. Transfer the dough to a parchment-lined baking sheet.
Brush the melted butter (or olive oil) over the surface of the dough. Sprinkle the mozzarella, parmesan, Italian seasoning, garlic powder, and red pepper flakes evenly over the top.
Using a pizza cutter or sharp knife, slice the dough into 12–14 breadsticks, but don’t separate them yet. This will make it easier to break them apart after baking.
Preheat the oven to 425°F (220°C) and bake for 15 minutes, or until the cheese is melted and bubbly, and the edges of the breadsticks are golden brown.
Let the breadsticks cool for 5 minutes, then use a knife to fully separate them. Serve warm with your favorite dipping sauces!
