Making shrimp sushi rolls is easier than it might seem! Follow these step-by-step instructions to create your rolls:
1. Prepare the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. Combine rice and water in a pot and bring to a boil. Once boiling, reduce heat, cover, and simmer for 20 minutes. Remove from heat and let it sit covered for 10 minutes.
2. Season the Rice: In a small bowl, mix rice vinegar, sugar, and salt. Heat until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.
3. Cook the Shrimp: Boil or sauté the shrimp in a skillet over medium heat for about 2-3 minutes per side until they turn pink and opaque. Remove from heat and let cool.
4. Prepare Your Workspace: Lay a bamboo sushi mat on a flat surface. Place a sheet of nori, shiny side down, on the mat.
5. Spread the Rice: Wet your hands to prevent sticking. Take a handful of sushi rice and spread it evenly over the nori, leaving about a 1-inch border at the top.
6. Add Fillings: On the rice-covered nori, lay down a few slices of avocado, a few pieces of cucumber, and 2-3 shrimp in a line along the bottom edge.
7. Roll the Sushi: Lift the edge of the mat closest to you and begin to roll it tightly away from you, pressing gently but firmly. Continue rolling until you reach the exposed edge of the nori. To seal the roll, wet the edge of the nori with a small amount of water and press it down.
8. Slice the Rolls: Using a sharp, wet knife, cut the roll into 6-8 equal pieces. Wipe the knife with a damp cloth between cuts for a clean slice.
9. Repeat: Continue the process with the remaining nori sheets and ingredients.
