Base Ingredients:
- 8 large eggs
- ½ cup cottage cheese
- ½ cup shredded Gruyère cheese (or cheddar)
- ¼ cup heavy cream
- ½ tsp salt
- ¼ tsp black pepper
Optional Add-Ins:
- Bacon & Gruyère: 4 strips cooked bacon, crumbled
- Spinach & Feta: ½ cup sautéed spinach, ¼ cup crumbled feta
- Mushroom & Swiss: ½ cup sautéed mushrooms, ¼ cup shredded Swiss
- Roasted Red Pepper: ¼ cup chopped roasted red peppers
Instructions
Step 1: Preheat the Oven and Prepare the Muffin Tin

Preheat oven to 300°F (150°C).

Lightly grease a 12-cup muffin tin with nonstick spray.

Fill a baking dish halfway with hot water and place it on the bottom rack—this creates steam for a sous vide effect.
Step 2: Blend the Egg Mixture

In a blender, combine eggs, cottage cheese, Gruyère cheese, heavy cream, salt, and black pepper.

Blend for 30 seconds, until smooth and frothy.
Step 3: Assemble the Egg Bites

Divide your chosen add-ins (bacon, spinach, mushrooms, etc.) evenly into each muffin cup.

Pour the egg mixture over the add-ins, filling each cup about ¾ full.
Step 4: Bake the Egg Bites

Place the muffin tin on the middle oven rack.

Bake for 25-30 minutes, until the egg bites are set and slightly puffed.

Let cool for 5 minutes before removing from the pan.
