Lemon Herb Salmon

  • Author: Luna
  • Total Time: 25 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley (or 1 tablespoon fresh parsley)
  • ½ teaspoon paprika (optional, for color)
  • 2 tablespoons unsalted butter, melted
  • Lemon slices, for garnish
  • Fresh parsley, for garnish

Instructions

1. Preheat the Oven and Prepare the Baking Dish

Preheat your oven to 400°F (200°C). Lightly grease a baking dish with olive oil or line it with parchment paper to prevent sticking.

2. Season the Salmon

Pat the salmon fillets dry with a paper towel to remove excess moisture. This helps the seasoning stick better. Place the fillets in the prepared baking dish.

3. Make the Lemon Herb Mixture

In a small bowl, mix the olive oil, lemon juice, lemon zest, minced garlic, salt, black pepper, oregano, thyme, parsley, and paprika. Stir until well combined.

4. Coat the Salmon

Brush or spoon the lemon herb mixture evenly over the salmon fillets, ensuring they are well coated. Drizzle the melted butter over the top for added richness.

5. Bake the Salmon

Place the baking dish in the preheated oven and bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).

6. Broil for a Golden Finish (Optional)

For a slightly crispy and golden top, switch your oven to broil mode and cook for an additional 2 minutes. Keep a close eye on it to prevent burning.

7. Garnish and Serve

Remove the salmon from the oven and let it rest for a couple of minutes. Garnish with fresh lemon slices and chopped parsley before serving.
