For the Chicken:
- 4 chicken thighs (bone-in, skin-on for extra flavor) or 2 large chicken breasts, halved
- 1 tablespoon olive oil
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika (optional, for a smoky depth)
For the Honey Mustard Glaze:
- 2 tablespoons Dijon mustard
- 1 tablespoon whole-grain mustard
- 3 tablespoons honey
- 1 tablespoon apple cider vinegar (or lemon juice)
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- 1 tablespoon butter (for basting, optional)
Instructions
Step 1: Preheat the Oven
- Preheat your oven to 400°F (200°C). If using a skillet method, heat a large oven-proof pan over medium heat.
Step 2: Prepare the Chicken
- Pat the chicken dry with a paper towel (this helps with crispiness).
- Season with salt, black pepper, and paprika on both sides.
Step 3: Sear the Chicken (for Extra Flavor)
- Heat 1 tablespoon olive oil in a large oven-proof skillet over medium-high heat.
- Place the chicken skin-side down and cook for 3-4 minutes until golden and crispy.
- Flip the chicken and cook for another 2 minutes. Remove from heat.
Step 4: Make the Honey Mustard Glaze
- In a small bowl, whisk together Dijon mustard, whole-grain mustard, honey, apple cider vinegar, garlic, and thyme until smooth.
Step 5: Coat and Bake
- Brush or spoon the honey-mustard glaze generously over the chicken.
- Transfer the skillet to the preheated oven (or use a baking dish if not using a skillet).
- Bake for 25-30 minutes until the chicken is cooked through and the glaze is caramelized.
Step 6: Baste and Serve
- Halfway through baking, baste the chicken with its juices for extra flavor.
- Remove from the oven once the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 5 minutes, then serve with extra glaze drizzled on top.
