For the Chicken:

  • 4 chicken thighs (bone-in, skin-on for extra flavor) or 2 large chicken breasts, halved
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional, for a smoky depth)

For the Honey Mustard Glaze:

  • 2 tablespoons Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 3 tablespoons honey
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • 1 tablespoon butter (for basting, optional)

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 400°F (200°C). If using a skillet method, heat a large oven-proof pan over medium heat.

Step 2: Prepare the Chicken

  1. Pat the chicken dry with a paper towel (this helps with crispiness).
  2. Season with salt, black pepper, and paprika on both sides.

Step 3: Sear the Chicken (for Extra Flavor)

  1. Heat 1 tablespoon olive oil in a large oven-proof skillet over medium-high heat.
  2. Place the chicken skin-side down and cook for 3-4 minutes until golden and crispy.
  3. Flip the chicken and cook for another 2 minutes. Remove from heat.

Step 4: Make the Honey Mustard Glaze

  1. In a small bowl, whisk together Dijon mustard, whole-grain mustard, honey, apple cider vinegar, garlic, and thyme until smooth.

Step 5: Coat and Bake

  1. Brush or spoon the honey-mustard glaze generously over the chicken.
  2. Transfer the skillet to the preheated oven (or use a baking dish if not using a skillet).
  3. Bake for 25-30 minutes until the chicken is cooked through and the glaze is caramelized.

Step 6: Baste and Serve

  1. Halfway through baking, baste the chicken with its juices for extra flavor.
  2. Remove from the oven once the internal temperature reaches 165°F (75°C).
  3. Let the chicken rest for 5 minutes, then serve with extra glaze drizzled on top.
