For the Truffle Filling (Base Option 1 – Cookie & Cream Cheese):

  • 1 package (300g) vanilla sandwich cookies or chocolate sandwich cookies
  • 200g cream cheese, softened
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)

For the Coating:

  • 300g chocolate chips or candy melts (dark, milk, white, or pastel-colored)
  • 2 tablespoons coconut oil or neutral oil (optional, for smoother dipping)

Decorations (Choose Your Favorites):

  • Colored sprinkles
  • Mini candy pearls
  • Colored candy drizzle (melted colored chocolate or candy melts)
  • Edible glitter or shimmer dust
  • Crushed pastel candies or mini chocolate eggs

Instructions

1. Prepare the Cookie Mixture

  • Add sandwich cookies to a food processor and pulse into fine crumbs.
  • Transfer crumbs to a mixing bowl.
  • Add softened cream cheese and mix until a smooth, uniform dough forms.
  • Stir in vanilla extract and almond extract if using.

2. Shape the Truffles

  • Use a tablespoon or small scoop to portion out dough.
  • Roll into egg shapes using your hands.
  • Place on a parchment-lined tray and refrigerate for 30 minutes to firm up.

3. Melt the Chocolate or Candy Coating

  • In a microwave-safe bowl, melt chocolate chips or candy melts in 30-second intervals, stirring between each, until smooth.
  • Add coconut oil to thin out the chocolate for easier dipping, if desired.
  • Prepare a second bowl if you’re using multiple coating colors.

4. Dip and Decorate the Truffles

  • Use a fork or dipping tool to lower each truffle into the melted chocolate.
  • Tap gently to remove excess coating.
  • Transfer coated truffles back to the tray.
  • While coating is still wet, decorate with sprinkles, candy pearls, or drizzle additional colors over the top.
  • Repeat until all truffles are coated and decorated.

5. Chill and Set

  • Place the tray in the refrigerator for at least 30 minutes or until chocolate is completely set.
  • Store in an airtight container in the fridge until ready to serve.
